Tuscan Herbed Potato Salad

This simple, quick rustic dish sings with savory herbs and earthy flavors.

  • 6 medium potatoes, cooked and cut into thick slices (yellow fleshed varieties like Yukon Gold and Yellow Finn are perfect)
  • 3 T good fruity olive oil
  • 1 large or 2 small cloves of garlic, very finely minced
  • 1 1/2 T balsamic vinegar (don't substitute)
  • 3 T finely chopped fresh parsley
  • 3 T finely chopped fresh chives
  • 3 T finely chopped fresh basil
  • 1/4 tsp salt, or to taste
  • 1/4 tsp freshly ground pepper

Prepare potatoes, set aside. Combine all the remaining ingredients, then toss lightly with the potatoes. Allow to stand about 1/2 hour to blend flavors. Taste for seasoning before serving at room temperature.

Serves 6
