
Tuscan Herbed Potato Salad

This simple, quick rustic dish sings with savory herbs and earthy flavors.
- 6 medium potatoes, cooked and cut into thick slices (yellow fleshed varieties like Yukon Gold and Yukon Gem are perfect)
- 3 T good fruity olive oil
- 1 large or 2 small cloves of garlic, very finely minced
- 1 1/2 T balsamic vinegar (don't substitute)
- 3 T finely chopped fresh parsley
- 3 T finely chopped fresh chives
- 3 T finely chopped fresh basil
- 1/4 tsp salt, or to taste
- 1/4 tsp freshly ground pepper
