Garden Gazpacho

A perfect recipe for using the food processor, but be careful not to over chop the vegetables.

  • 1 cup peeled and finely chopped tomatoes
  • 1/2 cup finely chopped peppers
  • 1/2 cup finely chopped cucumbers
  • 1/4 cup finely chopped scallions
  • 1 T chopped parsley
  • 3 cloves garlic, minced
  • 2 T minced chives
  • 3 to 4 T tarragon vinegar
  • 2 T olive oil 
  • 1 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. Tabasco (or more to taste)
  • 3 cups tomato juice

Combine all the ingredients in a glass or non-aluminum bowl and chill well.

Serves 4 to 8
