Garden Gazpacho
Printer Friendly VersionA perfect recipe for using the food processor, but be careful bc not to over chop the vegetables.
- 1 cup peeled and finely chopped tomatoes
- 1/2 cup finely chopped sweet peppers
- 1/2 cup finely chopped cucumbers
- 1/4 cup finely chopped scallions
- 1 T chopped parsley
- 3 cloves garlic, minced
- 2 T minced chives
- 3 to 4 T tarragon vinegar
- 2 T olive oil
- 1 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 tsp. Worcestershire sauce
- 1/2 tsp. Tabasco (or more to taste)
- 3 cups tomato juice
