Fast & Delicious No Cook Tomato Sauce

A fast sauce for a high-summer spaghetti dinner. Needs no cooking and retains the ingredients' beautiful colors and fresh flavors.

    • 4 to 6 large tomatoes, peeled, seeded and coarsely chopped
    • 1 red onion, minced
    • 2 Jalapeño peppers, stemmed, seeded and finely chopped (roasted and peeled first if you have time)
    • 2 to 3 cloves garlic, minced
    • 1 cup finely chopped fresh mint leaves
    • 2 T extra virgin olive oil
    • 2 T red wine vinegar
    • 1 tsp salt
    • Freshly ground black pepper to taste
    • 8 oz dried linguini or spaghetti
    • 3/4 cup freshly grated Parmesan or Asiago cheese 

Combine vegetables and mint leaves in a large bowl. Mix together oil and vinegar and pour over vegetables. Salt and pepper to taste. Let stand at room temperature 30 minutes to 1 hour to mix and develop flavors. Cook linguini in boiling salted water, drain well and toss with fresh sauce. Serve immediately, passing the grated cheese.
