Fast & Delicious No Cook Tomato Sauce
- 4 to 6 large tomatoes, peeled, seeded and coarsely chopped
- 1 red onion, minced
- 2 Jalapeño peppers, stemmed, seeded and finely chopped (roasted and peeled first if you have time)
- 2 to 3 cloves garlic, minced
- 1 cup finely chopped fresh mint leaves
- 2 T extra virgin olive oil
- 2 T red wine vinegar
- 1 tsp salt
- Freshly ground black pepper to taste
- 8 oz dried linguini or spaghetti
- 3/4 cup freshly grated Parmesan or Asiago cheese
