Marinated Melon with Honey Ginger Cream

A delightful treat and a lovely way to use this luscious fruit.

  • 1 ripe melon, peeled, cut into chunks or balls (use any sweet melon variety)
  • 2 cups fresh strawberries, hulled and halved
  • 1/2 cup orange juice
  • 2 tablespoons brown sugar
  • 1 cup low-fat sour cream or very fresh plain yogurt
  • 3 tablespoons honey
  • 3 tablespoons finely chopped crystallized ginger
Garnish:

Place melon chunks and strawberries in a large shallow dish. Combine orange juice and brown sugar and pour over the fruit. Marinate the fruit mixture in the refrigerator for 2 hours. Combine sour cream (or yogurt), honey and ginger in a small bowl and refrigerate for at least 30 minutes. Spoon fruit into individual bowls or a large serving bowl and top with sour cream mixture. Garnish with fresh mint leaves or lemon basil.

Serves 6
