GROWING INSTRUCTIONS

START SEEDS OUTDOORS

Don’t plant too early; cold conditions prevent good bean germination. In late spring, when nights are securely above 55°F (13°C), sow seeds in well-worked soil in full sun. Poke seeds in 1 inch deep and 3-4 inches apart in rows 2-3 feet apart.

GROWING NOTES

If first sowing comes up unevenly, replant right away; new seedlings catch up quickly. Bean seedlings are tempting treats to birds, so watch carefully and protect with netting if necessary. These sturdy legumes require full sun and a warm growing season. Plant in well-drained soil, but don't fertilize as they grow best without amendment.

HARVEST AND USE

To Harvest as Fresh Beans: When beans are fully formed but still green and tender, harvest pods, cut off ends and shell out the beans.

To Harvest as Dried Beans: When beans are hard and smooth inside dry, leathery pods, harvest whole crop. If frost or excessive rain threatens, pull entire plants and finish drying in a sheltered spot. Shell out the dried beans and put in sealed containers. Freeze for 3-4 days to eliminate any insects, then store in glass jars in a cool, dry place. Enjoy both fresh or dried beans cooked with onions, garlic, and savory herbs.
