Za’atar is an ancient and traditional herb grown throughout the Middle East and the cornerstone of a spice blend that bears the same name. GROWING INSTRUCTIONS
PERENNIAL
Spring/summer/fall harvest.
Frost hardy.
TO START INDOORS
Sow seeds thinly in a container of seed starting mix. Press gently into mix, but do not cover. Provide a good light source. Keep evenly moist as seedlings slowly emerge in 10 to 21 days. When seedlings are large enough to handle, acclimate gradually to outdoor conditions. Transplant clusters of 3 to 5 seedlings 8 to 10 inches apart in full sun.
TO PLANT DIRECTLY IN THE GARDEN
When warm spring weather arrives, sow in full sun in a well worked, finely textured soil with good drainage. Sow seed as thinly as possible, but do not cover as seeds need light to germinate. Tend carefully, keeping seedbed evenly moist and well-weeded. Plants double as a waterwise ornamental prized for its soft, velvety gray-green foliage.
HARVEST AND USE
To dry za'atar, harvest the leafy stems in the morning, ideally just before the plant flowers when the essential oils are strongest. Hang bundles upside down in a dry, well-ventilated spot out of direct sunlight for 1-2 weeks or until leaves easily crumble. Dried za’atar leaves can be mixed with ground sumac, toasted sesame seeds and salt to make the classic za’atar spice blend. Sprinkle on salads and serve alongside a bowl of olive oil for dipping toasted pitas and flatbreads. Or use it to season chicken or lamb – add it at the end of cooking to maintain flavor.
