The "gold standard" for home gardeners and southern growers alike, Covington is a premium variety prized for its exceptional flavor and reliable performance. Developed to improve upon the classic Beauregard, it produces high yields of uniform, well-shaped roots with smooth, rose-colored skin and deep orange, moist flesh. When roasted or baked, the interiors become creamy and sweet, making it the perfect choice for everything from holiday pies to simple oven fries.
These disease-resistant, vigorous plants thrive in the heat of summer. While they are the most popular variety in North Carolina, they adapt well to any garden with well-drained soil and a long growing season. One of Covington's best traits is its superior storage quality, maintaining its sweetness and firm texture for months after harvest.
