Fall Soup Garden

Sow these in late summer or early fall and you'll be ladling out the results all winter. Everything here earns its place in a soup pot: sweet fall carrots and beets, leeks and scallions for the aromatic base, hardy kales and chards that only get better after frost, cabbages and cauliflower for hearty stews, and the herbs that finish a bowl.
