Grilled Bruschetta With Summer Tomatoes

When you’ve got the grill going, make this treat that tastes heavenly with vine-ripe tomatoes. Makes a great appetizer on its own or a side for any main dish.
 

  • 2 large cloves of garlic, finely chopped
  • 3 medium to large ripe red tomatoes, seeded, coarsely chopped and drained
  • 1/3 cup chopped fresh basil
  • 1/3 cup chopped fresh Italian parsley
  • 1/3 cup of olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 8 thick slices crusty bread
Combine all ingredients except bread and reserve. Grill bread slices on both sides on the barbecue grill until toasted and marked with grill marks (or toast bread well). Top with tomato mixture and serve immediately.
