Curried Fresh Carrot Slaw

In this recipe from our cookbook, More Recipes From A Kitchen Garden, carrots, peanuts and a creamy curry dressing combine perfectly in a fresh pretty vegetable slaw/salad.

• 3 cups shredded carrots
• 1/2 cup golden raisins
• 3 Tbsp thinly sliced scallions, including part of the green tops
• 6 slices bacon, cooked until crisp, crumbled
• 1/2 cup roasted peanuts

DressingCombine well:
• 1/4 cup mayonnaise
• 1/4 cup sour cream or fresh whole milk yogurt
• 1 tsp sugar
• 1/2 tsp curry powder

Garnish:
• Fresh orange slices, skin and pith removed

 

In a bowl toss together the carrots, raisins and scallions. Mix in bacon and peanuts, then add dressing, tossing to thoroughly coat. Serve immediately, garnishing with orange slices.

Serves 6
