Crunchy Watermelon Radishes With Creamy Sesame Dressing

  • 2 cups thinly sliced watermelon radishes
  • 1/4 cup tahini
  • 5 scallions, thinly sliced
  • 3 Tbsp dry sherry
  • 2 Tbsp lemon juice
  • 1/4 tsp each salt and sugar
  • 1/4 cup water

Optional: 1/2 cup shopped of sliced almonds; 1 cup cooked cubed chicken meat

Combine radishes in a bowl. For the dressing, stir the rest of the ingredients into the tahini; it will be a thick paste. thin dressing to a creamy consistency with the water. Combine radishes with dressing and toss. Taste for seasoning. Sprinkle with chopped nuts if desired. Serve on lettuce. For a main dish salad, mix in the almonds and chicken.
