Sesame Spinach

Subtle oriental seasonings are perfect with fresh spinach and sesame finishes the dish.

  • 1 T soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • 2 T peanut oil
  • 2 cloves garlic, finely chopped
  • 2 tsp freshly grated ginger
  • 6 scallions, finely chopped
  • 1 very large bunch fresh spinach, washed and drained
Garnish:
  • 1 T toasted sesame seeds
  • Thoroughly mix soy sauce, sesame oil, and sugar. Set aside. Heat peanut oil in a large skillet, and add garlic, ginger, and scallions. Sauté over medium heat until softened, 2 to 3 minutes. Add spinach and stir-fry until cooked through but still a bit crispy, about 2 to 3 minutes. Add reserved soy sauce mixture and heat through. Remove from heat, sprinkle with sesame seeds, and serve immediately.

    Serves 3 to 4
