Fresh Kale Salad With Peanut And Lime Dressing

A surefire crowd pleaser! The lively dressing showcases nutritious, crunchy fresh kale in an especially tasty and colorful salad. A fine first course or appetizing lunch dish.
- 1 large bunch kale, center ribs removed, leaves cut into very thin ribbons
- 1 red, yellow or orange bell pepper cut into 1/2 inch dice
- 4-6 whole scallions, thinly sliced
- 1 large red apple, cut into julienne strips
- 1 cup chopped fresh cilantro
- 1 T peanut butter, chunky or smooth
- 4 tablespoons seasoned rice vinegar (be sure to buy the “seasoned” kind which is slightly sweetened and important in this recipe)
- 8 T peanut, olive or canola oil
- 3/4 tsp toasted sesame oil
- 1 clove garlic, finely minced
- juice of 1 large fresh lime
- 1/2 tsp sugar
- 1/4 tsp each, salt and freshly ground pepper
- 1/2 cup roasted peanuts, coarsely chopped
