Asian Style Spinach Salad

This dressing combines all my favorite Asian flavors. Add cooked chicken or shrimp for a complete full flavored but low calorie meal.

  • 1 pound fresh spinach (1 large bunch) washed and stems removed
Dressing:
  • 1 large clove garlic, finely minced
  • 1 T minced fresh ginger
  • 1/4 cup chopped scallions
  • 1/3 cup chopped fresh cilantro
  • 2 T rice vinegar
  • 2 T fresh lime juice
  • 2 T soy sauce
  • 1 tsp sugar
  • 1/8 tsp red chile flakes
  • 1 tsp toasted sesame oil
  • 1/3 cup peanut oil
Garnish:
  • 2 T freshly chopped mint leaves
  • 1/3 cup chopped peanuts

Place spinach leaves in a large salad bowl. Thoroughly combine all dressing ingredients in a food processor or blender. Process until well blended. Toss dressing with spinach, garnish with mint leave and peanuts and serve.

Serves 4
