Asian Style Spinach Salad

This dressing combines all my
favorite Asian flavors. Add cooked chicken or shrimp for a complete full
flavored but low calorie meal.
1
pound fresh spinach (1 large bunch) washed and stems removed
Dressing:
1 large clove garlic, finely minced
1 T minced fresh ginger
1/4 cup chopped scallions
1/3 cup chopped fresh cilantro
2 T rice vinegar
2 T fresh lime juice
2 T soy sauce
1 tsp sugar
1/8 tsp red chile flakes
1 tsp toasted sesame oil
1/3 cup peanut oil
Garnish: 2 T freshly chopped mint leaves; 1/3 cup chopped peanuts
Place spinach leaves in a large salad bowl. Thoroughly combine all dressing
ingredients in a food processor or blender. Process until well blended.
Toss dressing with spinach, garnish with mint leave and peanuts and serve.
