Garden Gazpacho

A perfect recipe for using the food processor, but be careful not to over chop the vegetables.

1 cup peeled and finely chopped tomatoes
1/2 cup finely chopped peppers
1/2 cup finely chopped cucumbers
1/4 cup finely chopped scallions
1 T chopped parsley
3 cloves garlic, minced
2 T minced chives
3 to 4 T tarragon vinegar
2 T olive oil
1 tsp. salt
1/4 tsp. freshly ground pepper
1 tsp. Worcestershire sauce
1/2 tsp. Tabasco (or more to taste)
3 cups tomato juice

Combine all the ingredients in a glass or non-aluminum bowl and chill well

Serves 4 to 8
