flavors of spicy ginger and cool cucumber go perfectly together.
1 large cucumber, peeled
3 scallions, thinly sliced (including part of green tops)
2 tsp. grated fresh ginger
1 clove garlic, finely chopped
1 T rice wine vinegar
1 T soy sauce
1 tsp. sesame oil
Garnish: fresh mint leaves
Halve the cucumbers lengthwise, scrape out seeds, adn cut into 1/4 inch slices.
Combine with remaining ingredients and toss to combine flavors. Garnish
with mint leaves before serving.
